Ingredients

  • 1 cup rolled oats (gluten-free if preferred)
  • 1/2 cup natural peanut butter (or almond butter)
  • 1/3 cup honey or maple syrup
  • 1/4 cup ground flaxseed
  • 2 tablespoons chia seeds
  • 1/4 cup mini chocolate chips (optional)
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a medium mixing bowl, combine the rolled oats, ground flaxseed, and chia seeds.
  2. Add the peanut butter, honey (or maple syrup), vanilla extract, and a pinch of salt to the dry ingredients.
  3. Mix thoroughly with a sturdy spoon or your hands until all ingredients are well combined and a dough-like consistency is formed. If the mixture is too dry, add a tiny bit more honey or peanut butter. If too wet, add a tablespoon of oats.
  4. Stir in the mini chocolate chips, if using.
  5. Roll the mixture into 1-inch balls and place them on a plate or baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up before serving. Store leftovers in an airtight container in the refrigerator.

Chef's Tip

For an extra boost of nutrition and flavor, try adding shredded coconut, finely chopped nuts, or a dash of cinnamon to your energy bite mixture before rolling!
