  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 unbaked 9-inch deep-dish pie crust

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the pumpkin puree, evaporated milk, and eggs until well combined.
  3. In a separate small bowl, combine the granulated sugar, salt, cinnamon, ginger, cloves, and nutmeg. Mix well.
  4. Add the dry spice mixture to the wet pumpkin mixture and stir until everything is thoroughly incorporated and smooth.
  5. Pour the pumpkin filling into the unbaked 9-inch deep-dish pie crust.
  6. Bake for 15 minutes at 425°F (220°C).
  7. Reduce the oven temperature to 350°F (175°C) and continue to bake for another 40-50 minutes, or until a knife inserted near the center comes out clean.
  8. Remove the pie from the oven and let it cool completely on a wire rack before slicing and serving. This allows the pie to set properly. Best served chilled.
