  • 2 lbs (approx. 1 medium) butternut squash OR 3 medium sweet potatoes (or a mix of both), peeled and cubed into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup (pure maple syrup preferred)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the cubed butternut squash and/or sweet potatoes.
