- 2 tablespoons unsalted butter, softened

- Place the finely chopped dark chocolate in a heatproof bowl.
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer around the edges. Do not boil.
- Pour the hot cream over the chopped chocolate. Let sit for 5 minutes without stirring to allow the chocolate to melt.
- Add the softened butter, vanilla extract, and pinch of salt to the bowl. Stir gently with a whisk or spatula from the center outwards until completely smooth and glossy. This is your ganache.
- Cover the bowl with plastic wrap, pressing it directly onto the surface of the ganache to prevent a skin from forming. Refrigerate for at least 2 hours, or until firm enough to roll.
- Prepare your coatings: place cocoa powder, powdered sugar, nuts, or sprinkles in separate shallow dishes.
- Once firm, use a small spoon or a mini ice cream scoop (about 1 tablespoon size) to scoop out portions of the ganache. Quickly roll them into balls between your palms.
- Immediately roll each truffle in your chosen coating until evenly covered.
- Place the finished truffles on a parchment-lined baking sheet or plate. Refrigerate for another 30 minutes to firm up completely before serving.

For the smoothest ganache, ensure your chocolate is very finely chopped. If your ganache seems separated, add a tablespoon of hot water and whisk vigorously until it comes back together.
