  • 1 Tbsp fresh parsley, chopped
  • 4 garlic cloves, minced
  • 1 lemon, halved
  • Salt & pepper to taste
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped

Instructions: Rub herb butter under the skin and over the chicken. Stuff with lemon and onion. Roast at 425°F (220°C) for 1 hour 20 mins or until internal temp hits 165°F.
