Instructions
- In a small bowl, mash the ripe avocado with a fork. Season with salt, pepper, and a squeeze of lime or lemon juice if desired. Set aside.
- Toast your bread slices to your preferred golden crispiness.
- Fill a medium saucepan with about 3-4 inches of water and bring to a gentle simmer. Add the white vinegar.
- Crack each egg into a separate small bowl or ramekin. Gently slide one egg into the simmering water, then immediately follow with the second egg.
