  • 2 large fresh eggs
  • 1 tablespoon white vinegar (for poaching)

  • Freshly ground black pepper to taste
  • Pinch of red pepper flakes (optional)
  • Fresh cilantro or chives, chopped (for garnish, optional)
  • A drizzle of extra virgin olive oil (optional)
  • A squeeze of fresh lime or lemon juice (optional, for avocado)

Instructions

  1. In a small bowl, mash the ripe avocado with a fork. Season with salt, pepper, and a squeeze of lime or lemon juice if desired. Set aside.
  2. Toast your bread slices to your preferred golden crispiness.
  3. Fill a medium saucepan with about 3-4 inches of water and bring to a gentle simmer. Add the white vinegar.
  4. Crack each egg into a separate small bowl or ramekin. Gently slide one egg into the simmering water, then immediately follow with the second egg.
  5. Cook for 3-4 minutes for a runny yolk, or longer if you prefer a firmer yolk. Using a slotted spoon, carefully lift the poached eggs from the water, allowing any excess water to drain.
