Ingredients
- 6 large eggs
- 2 tablespoons milk (or water)
- 1 tablespoon olive oil
- 1/2 small red bell pepper, finely diced
- 1/4 cup fresh spinach, roughly chopped
- 2 tablespoons crumbled feta cheese
- 1/2 ripe avocado, diced
- Salt and freshly ground black pepper to taste
- Optional: a pinch of red pepper flakes for heat
- Optional: fresh chives or cilantro for garnish
Instructions
- In a medium bowl, whisk together the eggs and milk until light and fluffy. Season with salt and pepper.
- Heat olive oil in a non-stick skillet over medium heat. Add the diced red bell pepper and sauté for 3-4 minutes until slightly softened.
- Add the chopped spinach to the skillet and cook for another 1-2 minutes until wilted.
- Pour the egg mixture into the skillet with the vegetables. Let it sit undisturbed for about 30 seconds until the edges begin to set.
- Gently push the cooked egg from the edges towards the center, tilting the pan to allow uncooked egg to flow underneath. Continue cooking and stirring gently until the eggs are mostly set but still slightly moist.
- Divide the scrambled eggs evenly into two bowls.
- Top each bowl with diced avocado and crumbled feta cheese. Add red pepper flakes and fresh herbs if desired. Serve immediately and enjoy!
